This course is offered through the Osher Lifelong Learning Institute (OLLI) at Colorado State University. You must be a member of Osher to enroll in this course.
Are you intimidated by wine lists? Do you wonder what wine to serve with chili? Do you know what wines you like but don't know why?
This course will give you the basis for deciding what wines to serve with what foods and what wines to order in a restaurant; the "rules" will be presented more as guidelines and will be, at times, broken. The course will cover such characteristics of wines as tannic, fruitiness, acidity, body, complex vs. simple.
Wines need not be expensive to be good; bargains are readily available once you know what to look for; "universal wines" will be discussed. During each class we will sample a couple of wines with the kind of foods you are likely to have at home or in a restaurant. Lecture/discussion time will be split about evenly between the topics of wine and food.

Instructors
Stephanie Davis, Pharm.D., is a graduate of the Barton & Guestier wine course at Chateau Magnol in Bordeaux, France, and is the founder of Kylix Wine, LLC, which is a wine consulting and events business. Stephanie is a graduate of a Master Sommelier's course. For her day job, Stephanie is a pharmacist at Poudre Valley Hospital.
Herb Cantor, BA (Chem.), J.D., is a retired patent attorney who, also, is a graduate of the Barton & Guestier wine course at Chateau Magnol in Bordeaux, France. Herb has been collecting and enjoying wines for over 40 years, as well as cooking gourmet meals for family and friends during that time.
